Miscellany | How to do Coffee Art

Think it looks easy? Wake up and smell the coffee! One estimate is that you’ll need around 1,500 coffees to start getting heart art right – the simplest latte art shape to master.

Get the kit: a lipped steel milk jug, milk thermometer, and steam wand (part of the espresso machine).

And the right ingredients: whole milk (its fat content makes things easier) and a freshly made espresso.

Put in the prep: cold milk goes in the jug, with the wand near the base.

Gradually draw the wand upwards until it’s just below the milk’s surface. Look for small bubbles and a temperature in the mid-60Cs (don’t top 70C!). Go with the flow: to pour, tilt the cup and aim for a constant – not too fast, not too slow –pour. Level cup when nearly full to create what Jori @baristainstitute, calls the ‘canvas’. Add artistic flourishes: move the jug closer to add details – practise a gentle wiggle. For a heart, pour a circle and use a final pull through with the jug’s lip to make a heart. This final step is key to many designs.

Capture on camera: Jori suggests filming yourself. Note that he says it took him half a year to master latte art, only becoming ‘great’ after a few years.

The cheat's way: Use a stencil for chocolate or cinnamon on top instead.

Recipe | Mocha ice cream cones

These coffee and chocolate cornets have a real kick; because ice cream’s not just for children

Serves 4-6 

300ml double cream 

175g sweetened condensed milk 

4 tbsp instant espresso powder 

4 tbsp coffee liqueur 

100g dark chocolate, roughly chopped 

6 Waffle cones 

1 Using an electric mixer, beat the cream in a large bowl until soft peaks form. Add the condensed milk gradually, while beating, followed by the espresso powder and liqueur. Next, add the chocolate and continue beating until you have a light and fluffy mixture. 

2 Pour the mixture into a container suitable for the freezer, cover with a lid or foil, and freeze for approx 6 hours or overnight. When ready to make the cones, take the ice cream out of the freezer and leave to soften for 10 mins before filling each cone with a scoop or two of ice cream. Topping optional but you’d be mad not to want a cherry on top.

Recipe: Coffee, walnut and maple porridge

A bowl of hot porridge made with a cup of home-brewed coffee (that’s coffee to put in the porridge, rather than drink), toasted walnuts and a drizzle of syrup is tasty fuel to kickstart those midwinter mornings when getting out from under your duvet is almost unbearable. Toast walnuts in advance to build in extra snooze time.

This recipe for winter morning fuel comes from the co-owner of London-based Danish restaurant Snaps+Rye

MAKES 2–3 BOWLS
2 tbsp chopped toasted walnuts
125g jumbo oats*
250ml full-fat milk
250ml home-brewed coffee 

TOPPING
Drizzle of maple syrup

1 Preheat oven to 180C/Fan 160C/350F. Place the walnuts on a baking tray and toast in the oven for 15 mins, turning after 5 mins.
2 Meanwhile, put the oats, milk and brewed coffee in a pan and cook over a medium heat for 5–10 mins.
3 Remove the walnuts from the oven and leave to cool.
4 Spoon the porridge into the bowls, top with the toasted walnuts and drizzle over a little maple syrup.

* Jumbo oats lend themselves perfectly to full-fat milk, you get a creaminess that you cannot be achieved from other milks.

We love being outdoors and enjoy the satisfaction that comes with a job well done.
