Recipe | Mixed Beans, Goat's Cheese & Tomatoes

Lovely for a late summer’s day. Adding rehydrated dried beans gives you the chance to use more interesting varieties.

Serves 4

Ingredients:

250g dried beans

Few sprigs thyme

2 bay leaves

500g mixed green beans, trimmed

2-3 spring onions, sliced

250g cherry tomatoes, halved

Small bunch flat leaf parsley, chopped

100g goat’s cheese

For the dressing:

2 tsp wholegrain mustard

Juice of half a lemon

4 tbsp olive oil

1 garlic clove, crushed

To make

1 Soak the dried beans in plenty of water for at least 12 hours.

2 When ready, drain and rinse the beans, then add the thyme and bay leaves and simmer in unsalted water for 40-60 mins, or until cooked to your preferred bite. Drain and discard the thyme and bay leaves.

3 Cut the green beans into smaller pieces if you like, then rinse and cook for 5-7 mins, or until just tender. Set aside a small amount of parsley, then mix all the veg, including the remaining parsley, in a large bowl.

4 Whisk the dressing ingredients together and toss with the veg. Crumble the goat’s cheese over the top, sprinkle with the reserved parsley, and drizzle with a little more olive oil and a good grind of black pepper.

Cook’s note: For a quicker version, tinned beans, such as kidney, borlotti or white beans, work just as well.

Recipe | Posh Beans on Toast

While there’s nothing wrong with a reliable tin of beans, ring the changes with a homemade version. These smoky cannellini beans on garlic toast are bursting with flavour, but still quick enough for lunch.

Serves 2

1 tbsp olive oil
1 small onion, finely chopped
1 tsp hot smoked paprika
½ tsp mixed spice
½ tsp oregano
Pinch of chilli flakes
200ml passata
½ tsp brown sugar
400g tin cannellini beans, rinsed and drained
A handful flat-leaf parsley, chopped
4 slices sourdough bread
1 garlic clove, peeled and cut in half

1 Heat the olive oil in a saucepan over a medium heat, then add the onion and cook gently until it’s softened, but hasn’t taken on any colour.

2 Add the paprika, mixed spice, oregano and chilli flakes to the onion and stir for a further 1 min before adding the passata and brown sugar.

3 Simmer for around 5 mins, or until the passata begins to brown a little, then stir in the cannellini beans and cook for another 5 mins until the beans are heated through. Remove from the heat and stir in the parsley.

4 Meanwhile, toast the bread and rub each slice with the cut side of the garlic. Top with the beans and serve.

Camping recipe | Smoky Boston beans & armadillo potatoes

No flames are required for this comfortingly simple cowboy supper of foil-wrapped herby spuds and a casserole of sweet, smoky beans – all of which is tucked into the hot, white coals to cook.

Serves 4
4 baking potatoes
30g salted butter
Handful of fresh thyme for the beans
1 tbsp olive oil
400g smoked bacon lardons
1 onion, roughly chopped
2 garlic cloves, finely chopped
2 tsp smoked paprika
1 tsp ground cumin
2tsp English mustard powder
2 tbsp tomato purée
1 tbsp black treacle
2 x 400g tins haricot beans in water
Handful of fresh parsley, roughly chopped
Natural yogurt, to serve

1 Using a sharp knife, cut slits widthways into each potato, working your way along from end to end – be careful to only cut three-quarters of the way down. Rub each potato generously with butter and carefully stuff sprigs of thyme in between some of the slits.
2 Individually wrap each potato in a double layer of foil and place directly on white coals (when the flames have died), for 30–40 mins, turning every 10 mins.
3 Cook the beans in either a Dutch oven* on an open fire or in a large saucepan on a camping stove. Heat the oil over a medium-high heat and add the lardons, frying for 5 mins until they just start to brown. Add the onion and continue to cook until softened.
4 Add garlic, paprika, cumin and mustard powder; stir thoroughly before stirring through the tomato purée and treacle. Add the beans along with the water from their tins, then half fill one of the tins with extra water and add that to the pan also.
5 Bring the beans to a simmer and allow to cook, stirring often, until the sauce has thickened – around 10–20 mins, depending on how you’re cooking them. Before serving, scatter the parsley over the beans.
6 To test the potatoes, give them a gentle squeeze: if they feel soft, they’re ready. Carefully unwrap each one and serve with a generous helping of beans and a dollop of yogurt.

* A Dutch oven is a lidded cast-iron or earthenware casserole robust enough to cook in the coals.
